How Many Grams Are in a Cup of Rice?

1 cup of rice ≈ 198 g

One US cup of uncooked long-grain white rice weighs about 198 grams.

Based on 198 grams per cup.

Why This One Is Not Exact

Every other conversion on this site is a definition: an inch is exactly 2.54 centimeters, and that never changes. This page is different. A cup measures volume and grams measure weight, and what bridges them is density — which depends on the ingredient and, far more, on how the cup was filled. The figure of 198 grams per cup is the standard reference, not a law of nature.

This is uncooked long-grain white rice, which King Arthur lists at 99 grams per half cup. Other varieties differ a little, and cooked rice weighs far more because of the water it absorbs.

Where This Comes Up

Rice is sold by weight and cooked by volume, which is why this conversion comes up both in recipes and on the back of the bag. Rice cookers add their own confusion with a measuring cup that is not a US cup at all.

A recipe calling for 2 cups of uncooked rice wants about 396 grams, which yields roughly 1.2 kilograms cooked.

What People Get Wrong

The cup that comes with a rice cooker holds 180 mL, not 237 mL — it is the Japanese gō, about three quarters of a US cup. Using a US measuring cup with a rice cooker’s water markings gives too much rice and not enough water.

Frequently Asked Questions

How many grams is a cup of cooked rice?

Considerably more than dry rice, because it absorbs two to three times its own weight in water. The exact figure depends on the variety and how much water was used, so weigh it dry if a recipe needs precision.

Does brown rice weigh the same?

Close, but slightly less per cup: the bran layer makes the grains less uniform, so they pack with a little more air between them.

How much uncooked rice per person?

About 75 to 90 grams of uncooked rice, roughly 1/3 to 1/2 cup, gives a normal portion.

What is a rice cooker cup?

It is 180 millilitres, the traditional Japanese gō, and it is about three quarters of a US cup.
